Sweet Potato Pie

Ingredients

  • 2 medium sweet potatoes, roasted, peeled and pureed, about 1 1/2 cups mashed
  • 1 cup light brown sugar
  • 2 whole eggs
  • 1 1/2 cups heavy cream
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla
  • pinch of salt
  • 1 9" Graham Cracker Crust, unbaked
  • 2 cups sweetened Bourbon Cream

Directions

Preheat the oven to 350F. In a mixing bowl, combine the first 8 ingredients. Mix until smooth. Pour into the prepared shell. Bake for about 45 minutes or until the center is set. Remove and cool completely. Slice and serve with a spoonful of the whipped cream
