Sweet Potato Pie
Ingredients
- 2 medium sweet potatoes, roasted, peeled and pureed, about 1 1/2 cups mashed
- 1 cup light brown sugar
- 2 whole eggs
- 1 1/2 cups heavy cream
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla
- pinch of salt
- 1 9" Graham Cracker Crust, unbaked
- 2 cups sweetened Bourbon Cream
Directions
Preheat the oven to 350F. In a mixing bowl, combine the first 8 ingredients. Mix until smooth. Pour into the prepared shell. Bake for about 45 minutes or until the center is set. Remove and cool completely. Slice and serve with a spoonful of the whipped cream
